Ingredients for the recipe for Cottage Cheese Rogaliki:
- 200g of cottage cheese
- 200g of unsalted butter
- 1 teaspoon of baking soda
- 1 teaspoon of lemon juice
- 2 cups of flour
- 1 cup of sugar
- 3-5 apples
- 50g of clarified butter
- Salt to taste
Instructions for making Cottage Cheese Rogaliki:
- In a large bowl, grind the softened unsalted butter and cottage cheese using a meat grinder.
- Add baking soda, lemon juice, sugar, and salt. Then add flour and knead the dough. Chill the dough in the refrigerator for 45-60 minutes.
- Roll out the chilled dough into a circle with a thickness of 5-6mm on a flat surface. Cut the circle into long triangles.
- On the wide end of each triangle, put 1 teaspoon of grated apples, sprinkle with sugar, and roll up into a roll.
- Place the rolls on a baking sheet lined with parchment paper.
- Brush the Rogaliki with melted clarified butter and sprinkle with sugar.
- Bake at 170°C for 25-30 minutes until the top is golden brown.
