Ingredients for the recipe for Cottage Cheese Rogaliki:

  • 200g of cottage cheese
  • 200g of unsalted butter
  • 1 teaspoon of baking soda
  • 1 teaspoon of lemon juice
  • 2 cups of flour
  • 1 cup of sugar
  • 3-5 apples
  • 50g of clarified butter
  • Salt to taste

Instructions for making Cottage Cheese Rogaliki:

  1. In a large bowl, grind the softened unsalted butter and cottage cheese using a meat grinder.
  2. Add baking soda, lemon juice, sugar, and salt. Then add flour and knead the dough. Chill the dough in the refrigerator for 45-60 minutes.
  3. Roll out the chilled dough into a circle with a thickness of 5-6mm on a flat surface. Cut the circle into long triangles.
  4. On the wide end of each triangle, put 1 teaspoon of grated apples, sprinkle with sugar, and roll up into a roll.
  5. Place the rolls on a baking sheet lined with parchment paper.
  6. Brush the Rogaliki with melted clarified butter and sprinkle with sugar.
  7. Bake at 170°C for 25-30 minutes until the top is golden brown.
