- Garlic – 2 cloves

Recipe for Ragu of pumpkin: Peel and chop the garlic into small cubes. Wash and slice the tomatoes into circles. Wash the eggplant, slice it into circles, and add salt. Wash and clean the pumpkin, then chop it into cubes.
Wash and chop the onion, carrots, and potatoes into small cubes. Fry the pumpkin, onion, eggplant, carrots, and potatoes separately in a heated pan with vegetable oil.
After that, transfer everything to a deep pot, add salt and pepper, bay leaf, pour in the tomato juice, and simmer for 25 minutes. Then add the canned green peas, fried eggplant, garlic, parsley, and 5 minutes before the dish is fully cooked, add tomato slices.
Serve the finished pumpkin ragu garnished with greens.
