Ingredients for the dough:

  • 3 cups of flour
  • 1 cup of milk
  • 1 cup of water
  • 1 egg
  • 50 grams of butter
  • 15 grams of dry yeast
  • 1 tablespoon of sugar
  • Salt and black pepper to taste

Ingredients for the filling:

  • 350 grams of feta or suluguni cheese
  • 50 grams of butter
  • 1 egg
  • Salt to taste
  • Vegetable oil for frying

Instructions:

Dough:

  1. Dilute yeast in warm water, add sugar and 1 tablespoon of flour. Mix and leave in a warm place for 10-15 minutes.
  2. Sift the rest of the flour and create a well in the center. Pour warm milk into the well.
  3. Crack the egg into a separate bowl and separate the yolk from the white. Add the yolk to the dough, and beat the egg white until it becomes frothy. Add the frothy egg white to the dough.
  4. Add melted butter, yeast mixture, salt, and black pepper to the dough. Mix well.
  5. Knead the dough, then leave it in a warm place for 2-3 hours.

Filling:

  1. Grate the cheese using a medium grater.
  2. Add egg, butter, and salt to the cheese, and mix well.

Assembly:

  1. Roll out the dough and cut small circles.
  2. Put a little bit of the filling on each circle of dough, then pinch the edges together.
  3. Fry the pastries on both sides in hot vegetable oil until they turn golden brown.
