Simple Carrot Cake Recipe

  • 1 cup grated carrots
  • 1 cup sugar
  • 2 cups flour
  • 3/4 cup vegetable oil
  • 1/2 cup raisins
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • Ground ginger, to taste
  • Vegetable oil, for greasing


  1. Rinse the raisins, pour hot water over them, and let them sit for 10 minutes. Then drain the water and coat the raisins with a small amount of flour.
  2. Gently whisk the eggs with a whisk. Add grated carrots, sugar, and vegetable oil.
  3. Mix everything thoroughly. Add sifted flour, baking powder, ground cinnamon, and ground ginger to taste. Mix again until smooth.
  4. Pour the batter into a greased baking dish, level it, and bake at 190°C (375°F) for about 45 minutes.
  5. The simple carrot cake is ready!
