Ingredients:
- 1 cup grated carrots
- 1 cup sugar
- 2 cups flour
- 3/4 cup vegetable oil
- 1/2 cup raisins
- 2 eggs
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- Ground ginger, to taste
- Vegetable oil, for greasing
Instructions:
- Rinse the raisins, pour hot water over them, and let them sit for 10 minutes. Then drain the water and coat the raisins with a small amount of flour.
- Gently whisk the eggs with a whisk. Add grated carrots, sugar, and vegetable oil.
- Mix everything thoroughly. Add sifted flour, baking powder, ground cinnamon, and ground ginger to taste. Mix again until smooth.
- Pour the batter into a greased baking dish, level it, and bake at 190°C (375°F) for about 45 minutes.
- The simple carrot cake is ready!
