Ingredients:
- 1 liter of milk
- 6-7 eggs
- 400g of flour
- 1-2 tablespoons of sugar
- 1 teaspoon of salt
- 1/4 cup of baking soda
- 1 teaspoon of lemon juice
- 5 tablespoons of vegetable oil
- Red caviar to taste
Instructions:
- Beat the eggs with sugar and salt, then add the baking soda.
- Gradually add the milk and sift in the flour. Mix until the batter is smooth.
- Add the vegetable oil and mix well.
- Heat a frying pan and grease it with oil for the first blin. Pour enough batter to make a thin pancake.
- Fry on both sides until golden brown.
- Stack the blini on top of each other and cover with a plate for 15-20 minutes to prevent them from breaking when rolled.
- Spread caviar on each blin and roll into a roulade.
