Blini with Caviar Recipe

Блины с икрой

Ingredients:

  • 1 liter of milk
  • 6-7 eggs
  • 400g of flour
  • 1-2 tablespoons of sugar
  • 1 teaspoon of salt
  • 1/4 cup of baking soda
  • 1 teaspoon of lemon juice
  • 5 tablespoons of vegetable oil
  • Red caviar to taste

Instructions:

  1. Beat the eggs with sugar and salt, then add the baking soda.
  2. Gradually add the milk and sift in the flour. Mix until the batter is smooth.
  3. Add the vegetable oil and mix well.
  4. Heat a frying pan and grease it with oil for the first blin. Pour enough batter to make a thin pancake.
  5. Fry on both sides until golden brown.
  6. Stack the blini on top of each other and cover with a plate for 15-20 minutes to prevent them from breaking when rolled.
  7. Spread caviar on each blin and roll into a roulade.
