Ingredients for the Lenten orange-tomato cake:
- 250 ml tomato juice
- 200 grams sugar for the cream and 200 grams for the cake batter
- 5 tablespoons sunflower oil
- 2 teaspoons baking soda
- 600 grams wheat flour
- 1/2 teaspoon salt
- 1 tablespoon orange juice (freshly squeezed is recommended)
- 6 tablespoons semolina
- 90 grams orange jelly
Instructions for making the Lenten orange-tomato cake: First, prepare the cake batter from which you will bake the cake. Take a deep bowl, pour tomato juice into it, add sugar, sunflower oil, and salt. Mix everything well to dissolve the salt and sugar crystals. Then add baking soda to the mixture, previously extinguished with vinegar, mix it and let it sit for fifteen minutes.
After the required time, gradually add wheat flour to the mixture. Then knead the dough until it is elastic and soft in consistency. Form the dough into a sausage shape and cut it into six equal parts. Roll out each part to make a pancake and bake them in the oven.
When the cakes are baked, level them, and don’t throw away the trimmings. Later, they will be needed to decorate the cake. Once the cake layers are ready, prepare the cream that you will use to moisten them. Take a small saucepan, add sugar and orange juice to it.
After the liquid boils, add semolina to it. Then reduce the heat and cook the orange porridge for approximately 10 minutes. Then add orange jelly to the ready orange porridge when it boils, and turn off the heat.
Let the resulting mixture cool down. Now increase the resulting mass. To do this, beat the orange jelly porridge with a mixer. It should become airy and fluffy. Spread the baked cake layers with the prepared cream, stack them on top of each other.
Then carefully spread the orange-tomato cake with the cream and sprinkle with crumbs from the cake trimmings. Put the finished cake in the refrigerator and leave it there overnight. After the cake is properly soaked and cooled, take it out of the refrigerator, cut it into pieces, and serve it with tea. This is an excellent Lenten dish that is both delicious and easy to prepare!
