Banana Caramel Cake Recipe

Ingredients for the cake:

  • 1.5 cups of flour
  • 1 teaspoon of baking powder
  • 100g of unsalted butter
  • 1 egg
  • 2 tablespoons of sugar
  • 125g of yogurt

Ingredients for the filling:

  • 50g of unsalted butter
  • 100g of sugar
  • 6 bananas

Instructions:

  1. Sift the flour into a bowl and make a well in the center. Add the melted butter and yogurt into the well. Add the sugar and egg, and knead the dough until it is soft and smooth.
  2. Wrap the dough in plastic wrap and refrigerate for 40-50 minutes.
  3. Melt the butter in a saucepan, add the sugar, and cook the mixture, stirring constantly, until it turns into caramel (about 5-6 minutes). Pour the caramel mixture into a cake pan.
  4. Peel the bananas, cut them lengthwise, and arrange them in a circle on top of the caramel.
  5. Roll out the chilled dough on a floured surface and cut it into a circle slightly larger than the diameter of the cake pan.
  6. Cover the bananas with the dough, tucking in the edges, and bake in a preheated oven at 180°C for 25-30 minutes.
  7. Remove the cake from the oven, carefully place a plate on top of the cake pan, and invert the cake onto the plate. The bananas should be on top.
  8. The cake can be topped with chocolate glaze and whipped cream as desired.
