Soljanka with sausage

Ingredients for Soljanka with sausage recipe:

  • Smoked sausage – 250 grams
  • Pearl barley – 1/3 cup
  • Cucumber pickle – 1/2 cup
  • Potatoes – 3 pieces
  • Onion – 1 piece
  • Carrot – 1 piece
  • Pickled cucumbers – 2 pieces
  • Black peppercorns – 3 pieces
  • Bay leaf – to taste
  • Dill – to taste
  • Parsley – to taste
  • Salt – to taste
  • Vegetable oil – for frying

Recipe for Soljanka with sausage:

  1. Rinse pearl barley well, cover with cold water and leave for 1-2 hours to swell. Then drain the water, cover with fresh water and put on the stove. Cook until the barley is tender.
  2. While the barley is cooking, peel and rinse the onion and carrot. Finely chop the onion and grate the carrot on a medium grater. Cut the smoked sausage and pickled cucumbers into small cubes.
  3. Fry the onion and carrot in vegetable oil until golden brown. Add the sausage, fry lightly, and then add the pickled cucumbers. Stew for about 5 minutes over low heat.
  4. When the barley is soft, add the diced potatoes and cook for about 15 minutes. Then add the fried vegetables with sausage, bay leaf and black peppercorns. Pour in the cucumber pickle, add salt and cook for about 3 minutes after boiling.
  5. Add chopped dill and parsley, let the soljanka with sausage infuse for about 5 minutes. Soljanka with sausage is ready!
