Instructions for Paella with Chicken and Seafood Recipe:
- Heat the chicken broth in a saucepan over low heat. Add saffron, mix, and let it infuse.
- Carefully clean the mussels with a brush, scrape off with a knife, and transfer to a small saucepan.
- Pour in water and cook over low heat for 3 minutes, then transfer the broth in which the mussels were cooked to a separate container.
- Cut the chicken breasts into small, uniform pieces. Cut the hunter sausages into pieces about 1.5 cm thick, and slice the bacon into thin pieces.
- Wash the bell pepper, remove the seeds, and cut into cubes. Peel and finely chop the onion and garlic.
- Wash the tomatoes and parsley and dry with paper towels. Then peel the tomatoes and cut into small pieces, and finely chop the parsley.
- In a deep frying pan with a thick bottom, heat the olive oil and add the chicken meat. Fry for 5 minutes, then transfer to a plate.
- In the remaining oil in the pan, fry the bacon for 5 minutes. Transfer to a separate plate, and then fry the hunter sausages in the same oil for 5 minutes. Transfer them to the plate with the bacon.
- In the same frying pan, add the onion, garlic, and bell pepper. Fry for 5 minutes, then add the carefully washed rice, bell pepper, chili pepper, salt, and bay leaves.
- Mix everything thoroughly and cook for another 2 minutes. Then add the fried chicken, bacon, and sausages. Pour in the broth from the mussels, the saffron-infused chicken broth, and mix everything together. Cover the pan with foil and place in a preheated oven.
