Ingredients:
- Bread – 1/4 loaf
- Black bread crumbs – 2 handfuls
- Bread crusts – 2 pieces
- Raisins – 50 grams
- Kvass wort – 1 tablespoon
- Jam – 2-3 tablespoons
- Sugar – 1 tablespoon
- Water
Instructions:
- First, prepare the starter for the kvass. To do this, crumble black bread into a 500 ml jar, add raisins, pour in warm water, add a tablespoon of sugar, and leave for a few days to ferment.
- Once the starter is ready, you can start making the kvass. Pour the starter, black bread crumbs, bread crusts, kvass wort, jam, and cold water into a large container, but do not fill to the top. Leave to ferment.
- Drain the kvass through cheesecloth or a fine sieve once every two days. Store the kvass in the refrigerator.
