Blini with Liver

Блины с печенью

Ingredients for Blini:

  • 500 ml milk
  • 2 eggs
  • 2 tbsp vegetable oil
  • 1 tbsp sugar
  • 200 g flour
  • 2 tsp baking powder
  • salt to taste
  • vegetable oil for frying

Ingredients for Filling:

  • 500 g chicken liver
  • 3 eggs
  • 150 g onion
  • salt and black pepper to taste
  • sunflower oil for frying

Recipe:

  1. Combine sifted flour, baking powder, sugar, and salt.
  2. Add eggs, vegetable oil, and milk to the dry ingredients and mix well.
  3. Heat a frying pan with vegetable oil and pour the batter, spreading it evenly on the surface of the pan. Fry the blini on both sides and remove to a plate.
  4. Sauté finely chopped onions in sunflower oil.
  5. Cut the liver into pieces and fry with the onions for about 7-8 minutes. Remove from heat, let cool, and grind through a meat grinder.
  6. Boil the eggs, peel and grate finely.
  7. Combine the liver, eggs, salt, and pepper to taste, and mix well.
  8. Place the filling on the blini and fold them into envelopes. Fry the blini envelopes on both sides in sunflower oil until golden brown.
  9. Serve the blini with liver on a plate.
