Ingredients for a 3-liter pot of solyanka:
- Pork ribs – 600 grams
- Rice – 70 grams
- Pickled cucumbers – 4 pieces
- Onion – 1 piece
- Carrot – 1 piece
- Potatoes – 3 pieces
- Bay leaf – 1 piece
- Parsley – to taste
- Black peppercorns – to taste
- Salt – to taste
- Vegetable oil – for frying
Directions:
- Wash and dry the pork ribs with paper towels, then fry them in heated sunflower oil until golden brown.
- Transfer the ribs to a pot with hot water and boil for 20-30 minutes.
- Add washed rice and diced potatoes to the pot. Salt to taste and cook on medium heat until the rice and potatoes are almost fully cooked.
- Meanwhile, cut the pickled cucumbers into small cubes.
- Peel and finely chop the onion and carrot, then fry them in a separate pan with heated vegetable oil until golden brown.
- Add the pickled cucumbers to the pan and simmer for 7 minutes. Transfer the cooked vegetables to the pot.
- Add bay leaf and black peppercorns to the pot and boil for 2-3 minutes. Turn off the heat, add chopped parsley and let it steep for 5 minutes before serving.
