Ingredients for a 3-liter pot of solyanka:

  • Pork ribs – 600 grams
  • Rice – 70 grams
  • Pickled cucumbers – 4 pieces
  • Onion – 1 piece
  • Carrot – 1 piece
  • Potatoes – 3 pieces
  • Bay leaf – 1 piece
  • Parsley – to taste
  • Black peppercorns – to taste
  • Salt – to taste
  • Vegetable oil – for frying


  1. Wash and dry the pork ribs with paper towels, then fry them in heated sunflower oil until golden brown.
  2. Transfer the ribs to a pot with hot water and boil for 20-30 minutes.
  3. Add washed rice and diced potatoes to the pot. Salt to taste and cook on medium heat until the rice and potatoes are almost fully cooked.
  4. Meanwhile, cut the pickled cucumbers into small cubes.
  5. Peel and finely chop the onion and carrot, then fry them in a separate pan with heated vegetable oil until golden brown.
  6. Add the pickled cucumbers to the pan and simmer for 7 minutes. Transfer the cooked vegetables to the pot.
  7. Add bay leaf and black peppercorns to the pot and boil for 2-3 minutes. Turn off the heat, add chopped parsley and let it steep for 5 minutes before serving.
