Ingredients:
- 450g carrots
- 250g flour
- 100ml vegetable oil
- 180g sugar
- 100g raisins
- 20ml lemon juice
- 10g baking soda
- 3 eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp butter
- Powdered sugar to taste
Instructions:
- Peel, wash and grate the carrots. Rinse the raisins, pour hot water over them and leave to soak. Then drain the water and pat the raisins dry.
- Sift the flour and mix with cinnamon, nutmeg and raisins.
- Beat the eggs with the sugar using a mixer until smooth. While still beating, gradually pour in the vegetable oil. Add the grated carrots and baking soda dissolved in lemon juice.
- Mix everything thoroughly until smooth. Pour the batter into a greased baking dish and bake at 170-175°C for about 1 hour.
- Let the pie cool, dust with powdered sugar and serve with tea. Enjoy your meal!
