Ingredients for the pancake cake with apples – a tasty recipe for Maslenitsa: For making pancakes you will need: milk – 500 ml eggs – 3 pieces flour – 300 grams salt – 1 pinch sugar – 1 tablespoon cognac – 4 tablespoons (you can replace with Amaretto liqueur) soft butter – 30 grams For making the filling you will need: firm apples – 5-6 pieces sour cream – 3 tablespoons cinnamon – 1 large pinch sugar – 50 grams Recipe for making pancake cake with apples – a recipe for Maslenitsa: First, prepare the dough for the pancakes. To do this, sift the flour through a sieve, pour in the milk and beat with a whisk or mixer. While continuing to beat, add one egg to the resulting mixture. Add salt, sugar, butter and pour in the cognac.

Mix everything carefully and place in a warm place for 1 hour. While the dough is resting, prepare the filling. To do this, remove the skin from the apples, cut them into pieces, removing the core. Transfer the prepared apples to a saucepan or frying pan, pour half a glass of cold water over them, cover and simmer over moderate heat for 10 minutes.

Then add sugar, sour cream, and cinnamon. Mix everything and simmer without a lid for about 3 – 4 minutes over high heat. After the filling is ready, completely cool it. When the dough is ready, you can start frying the pancakes.

In a frying pan, heat sunflower or butter, pour in 1 ladle of batter and turn the pan so that the batter spreads evenly. Fry all the pancakes in this way. Now you can start assembling the cake. To do this, take a rectangular shape and line it with food film. Then place two or three pancakes on the bottom of the form so that their edges hang down.

Then lift them up and continue filling the cake. Lay out 2 folded in half pancakes, and on them – a small amount of filling.

In this way, all the pancakes are laid out, with each layer being coated with apple filling. Cover the last layer of pancakes with the hanging edges of the first pancakes and cover with food film. Place the prepared pancake cake under a weight and refrigerate overnight.

To remove the cake from the mold, turn it upside down on a plate and tap it with your hand, it will come off. When serving the cake to the table, cut it into pieces about 3 centimeters thick.
